Now open: Luke Mangan launches new Brisbane Airport eatery
The chef and restaurateur is kicking off a series of culinary residencies at the domestic hub.
Luke Mangan is no stranger to Aussie travellers, with the chef’s bistro at Sydney Airport’s T3 frequently drawing an adoring crowd thanks to its succulent seafood and steaks, not to mention those delicious cocktails.
It’s finally Brisbane’s turn to get in on the action. But, in classic Mangan style, there’s a twist, with the chef just the first in a rotating series of familiar faces and emerging talents taking the helm at The Independent – and it’s now open.
During his residency, the French-Asian menu will span classics such as sashimi tacos, prawn rolls and expertly-cooked steaks, before another chef steps up to the hot plate with a fresh offering later in the year.
“We’re really focused on local produce here; not just on food but also in the bar with spirits and things like that,” explains Mangan, adding “it’s a place for everyone.”
“You can come sit at the bar, have a glass of wine and a steak and chips,” as well as “freshly shucked oysters, some beautiful Mooloolaba prawns.”
Other signature dishes making the cut include market fish and bountiful seafood towers for two, both of which are vastly different to typical airport fare.
Created in collaboration with Brisbane Airport and Airport Retail Enterprises, the venue itself features a dramatic, sculptural design “inspired by the Brisbane River”, plus lush greenery and window-side seating, all flooded in natural light.
Complementing the ever-evolving fare is a permanent drinks list, featuring margaritas made from Queensland agave spirit and green ant gin from the Larrakia people of the Northern Territory, plus a comprehensive low and non-alcoholic beverage menu.
Martin Ryan, Brisbane Airport’s Executive General Manager of Commercial, describes the concept as “reimagining the dining scene for travellers”, while also noting you can “come back after a few months and it will be an entirely new menu.”
Positioned between gates 40 and 41 at the domestic terminal, The Independent is the latest piece of the airport’s multi-billion dollar redevelopment project, joining The Common, Newstead Brewing Co. and Seeds by Bruno Loubet.
